for the love of quinoa

quinoa is one of our favorite grains to eat around here.
as a vegan it's a great addition to our diet providing essential amino acids
and good quantities of calcium, phosphorus, and iron.
not to mention it tastes just yummy!

quinoa pilaf
ingredients:
-1 cup of quinoa
-2 cups of water
-veggies of you choice
{i used grape tomatoes, carrots, onion, spinach and green pepper}
-garlic powder
-sea salt to taste

IMG_5265

-pour the water and quinoa into the pan
-add in your chopped veggies
-bring water to a boil
-once the water is boiling reduce it to a simmer,
cover the quinoa and allow it to cook for 10-15 minutes until the water is absorbed.
{you'll know it's done when the grain appears soft and translucent
and the germ ring around the outside is visible.}
