couscous

ingredients:
-1 cup couscous
-2 cups of water
-2 tbs olive oil
-1 large carrot chopped
-1 large banana pepper sliced
-3 cloves of garlic chopped
-half a red onion chopped 
-cherry tomatos halved 
directions:
-heat 1tbs of olive oil on medium/ low heat in a frying pan.
-add in garlic sauté for 3 minutes and add in chopped onion.
-while garlic and onions are sautéing bring 2 cups of water and 1tbs olive oil to a boil.
-once boiling stir in couscous bring to a boil again then remove from heat. 
-cover and let stand for 5 minutes.
-once the garlic and onions are soft add in carrots and banana peppers.
-cook for 5-7 minutes or until carrots are slightly soft {don't overcook the veggies!}
-remove the lid from your couscous fluff with a fork and stir into the veggies. 
once i plate it i like to add in some cold cherry tomatoes straight out of the fridge.
something about the crisp cold tomatoes with the warmth of the couscous tastes so yummy!
